Slow Cooked meat is the absolute best for flavour. One cut, which my dad recommended to me for slow cooking, is beef brisket. It's a so-called "humble cut" because it needs a lot of cooking before it becomes tender and juicy. It costs about £8 for a large piece which would feed 4-5 people.You really don't need to add much to beef brisket, because it's full of flavour. For this recipe, I have used red wine and beef stock with garlic, simple complementary flavours. I cook the beef with carrots and onion so they soak up all the juices and I don't need to worry about cooking any veg separately.

Slow cooking is the perfect way to cook beef brisket, as when it's cooked low and slow, it just falls apart beautifully. It's fantastic for batch cooking and freezer meals and you can serve it with pretty much anything. It's one of our go-to meals now. I promise you won't be disappointed if you try it!

If you want to cook some potatoes in the Slow Cooker Beef Brisket meat juices, peel and chop them into slightly smaller chunks than you normally would, add more stock at the beginning and place the potatoes around the sides of the meat. For the steak seasoning, I use the one that comes with Donald Russell steak boxes, but the brisket will still be delicious without it.

Slow Cooker Beef Brisket

ingredients:


  • 800g beef brisket
  • 250ml red wine
  • 100ml beef stock
  • 1 tbsp tomato puree
  • 4 garlic cloves, crushed
  • 1 onion
  • 3 carrots
  • 1 tbsp steak seasoning (optional)

instructions

1. Chop the onion and peel and slice the carrots. You want the carrots to be sizeable so they hold together when cooked so go for 5cm chunks at least.
2. Put the crushed garlic, onions, carrots, red wine and stock in the slow cooker.
2. Cut the elastic from the brisket and lay the meat on top of the other ingredients. Sprinkle steak seasoning on top of the meat if desired.
3. Set the slow cooker to low for 7-8 hours, or high for 4-5.  Add more hot water if it starts to dry out.
4. The meat's ready when it easily shreds against a wooden spoon.
5. Serve with roast potatoes.
