Christmas is over for another year and there's no excuse for eating lovely treaty things every day anymore, unfortunately. Back to normal dinners!

Spaghetti Bolognese is such a staple family dish, everyone needs their own reliable recipe for it. There are at least a million versions out there, but did you know that the traditional Italian version was made with tagliatelle instead of spaghetti? Seems we've all been doing it wrong!

Spaghetti Bolognese was something I made a fair bit before I started trying to learn more about cooking. It was only when I discovered several years ago that,  as with most mince dishes, the key is cooking it in beef stock and reducing it down, that I really made a good one. That's what gives you the best flavour. Obvious now, I guess, but then nothing's obvious to a beginner!

So here is a beginner's Spaghetti Bolognese recipe, a really easy one to follow, that will get you a delicious meal every time. One to get you started if you've never made it before. I use 5% fat beef mince to cut the calories back, but you can use whatever beef mince you prefer. I always make it for 4, even though there's only 2 of us, because I love leftovers for lunch!

If you're doing Slimming World, and you swap the oil for cooking spray, this recipe is 3.5 "syns". Leave out the wine and it's a syn-free spaghetti bolognese recipe.

Easy Spaghetti Bolognese

Easy Spaghetti Bolognese- an easy recipe for classic spaghetti bolognese, suitable for beginners. Syn-free on Slimming World with some adaptations (see notes)

ingredients:

500g 5% fat beef mince
1 onion
2 garlic cloves, crushed
1 tbsp oil
1 tbsp tomato puree
400g chopped tomatoes
1 tsp Worcestershire sauce
250ml beef stock
100ml red wine
320g spaghetti
grated cheese/parmesan (optional)

instructions

1. Put the oil in a large saucepan on medium heat.
2. Chop the onion.
3. When the oil is heated, add the onion and garlic to soften.
4. Add the tomato puree and stir through.
5. Add the mince and the Worcestershire sauce and turn the heat up.
4. Break the mince up with a wooden spoon and stir regularly to make sure it browns throughout.
5. Once all the mince is browned, add the tin of tomatoes, red wine and the beef stock and stir well. 
6. Turn back to medium heat and leave to simmer for 20 mins. It should be glossy and reduced when done.
7. While the sauce simmers, boil some salted water and add the spaghetti to the water to cook until softened.
8. Serve the sauce on top of the spaghetti and add some grated cheese or parmesan, if using.

NOTES:

To make this spaghetti bolognese syn-free on Slimming World, use spray oil and leave out the wine. If you keep the wine, it's 3.5 syns per person.
